Beef and other red meats are not ingredients that one usually struggles to find a wine pairing with, but to really get the best from the subtle flavours of well-reared animals or dry-aged cuts, a Carignan from a high mineral soil can make the match really special.

Based in the small town of Rasiguères in the South West of France, Domaine Seguela vines are cultivated bio-dynamically on the schist and gneiss soils on the foothills of the Pyrenees.

Les Candalières is a blend of 60% Carignan, 20% Syrah,15% Grenache, 5% Mouvedre. This red wine has a voluptuous bouquet and flavour of black fruits and spices which gives a delicious freshness on the finish.This rich and fresh red wine goes very well with red meats and game dishes, and makes a regular appearance as a pairing for beef dishes at Gauthier Soho.
