6 x Domaine Seguela, Les Candalières 2013
Beef and other red meats are not ingredients that one usually struggles to find a wine pairing with, but to really get the best from the subtle flavours of well-reared animals or dry-aged cuts, a Carignan from a high mineral soil can make the match really special.
Based in the small town of Rasiguères in the South West of France, Domaine Seguela vines are cultivated bio-dynamically on the schist and gneiss soils on the foothills of the Pyrenees.
Les Candalières is a blend of 60% Carignan, 20% Syrah,15% Grenache, 5% Mouvedre. This red wine has a voluptuous bouquet and flavour of black fruits and spices which gives a delicious freshness on the finish. This rich and fresh red wine goes very well with red meats and game dishes, and makes a regular appearance as a pairing for beef dishes at Gauthier Soho.
It is also currently trusted by London best restaurants such as Marcus Wareing's Gilbert Scott (listed at 49.00 per bottle, pictured) Chez Bruce (49.00) The Ledbury (listed at £46.00 per bottle), Antidote Wine & Bar (£40.00) and Gordon Ramsay's restaurants Maze (£51.00), Pétrus and London House.
Les Candalières will lay down and improve for 5 years.
