Spring is just around the corner, so a bright, fresh white wine is ideal. This week we’ve chosen a delightful Sauvignon de Saint-Bris, Domaine Sorin De France, 2015, something of a one-off in the very predominant Chardonnay production of the Burgundy Region.
We’ve secured for the wine club a very small allocation of 90 bottles only for this vintage, which has been very successful as part of our wine pairing at Gauthier Soho.
Saint-Bris is now an AOC since 2003 (Appellation d’origine controlée) located in the Burgundy wine region of France, around the village Saint-Bris-le-Vineux a few kilometres southwest of the Chablis AOC area.

Sauvignon, not Chardonnay

The special thing about Saint-Bris is its Sauvignon grapes,  rather than the Chardonnay of Chablis and the well-known white Burgundies. Saint-Bris is the only Burgundy AOC that allows Sauvignon in its wines. 

This is a subtle dry wine with a lively acidity, of a pale colour with green highlights, dominant aromatics based on lemon, grapefruit, blackcurrant bud, elderberry and a lightly smoky scent, without the more pronounced Sauvignon Blanc flavours that the wines of Sancerre or Pouilly-Fumé can show.

The minerality of the soil accentuates the freshness of this wine and make this wine an obvious partner for seafood, oysters, fish or as an aperitif, but it's cheese where we've found it really stands on its own. Deeply flavoured goat’s cheeses of the Loire Valley work very well and we’ve also enjoyed it with some fabulous soft Brie this week.
