The Domaine Les Enfants Sauvages (‘the wild children’) represents the work of Carolin and Nikolaus Bantlin, a couple from Germany who moved their young family to Opoul, Roussillon.

Looking simply to settle to the area, they were shown a property with 8 hectares of vines and instantly fell in love. At first selling their grapes, Carolin took an oenology course and they began to make their own wines.

Passionate about the benefits of organic agriculture, they set about removing all chemical input and since 2001 have been 100% biodynamic. Their efforts have paid off very well. ‘Ché Chauvio’ focuses on two organic grapes - Syrah and the less well known Cinsault, a big berry grape better known for bolstering Grenache around the southern Rhône.

The organic production boosts the natural minerality of the fruit, so we have great intense juiciness while light and clear with little tannins so especially drinkable over an easy lunch.

The wine also shows notes of garrigue (fragrant plants that grow wild around the Mediterranean, such as juniper, thyme, rosemary and lavender) and ripe black fruits. Superb depth and range for such low alcohol.

Located right down in the warmest southernmost corner of France, home to the great Fitou and close to the famous anchovy ports around Collioure, the Côtes Catalanes offers some of Roussillon’s most intriguing fruity wines.

We've been a fan of the Bantlins' wines for a long time at Gauthier Soho, but we've also learned that Domaine Les Enfants Sauvages wines are listed at the two-Michelin-Starred Gidleigh Park (£55 per bottle) and the notoriously fussy three-Michelin-starred Auberge du Vieux Puits in Fontjoncouse, France.
