‘When spring melts snow, buy white Bordeaux’
Perfect for the new season, with lighter seafood or asparagus dishes as we move into Spring.
A superb White Wine from the ‘Entre deux Mers’ (between two seas) region of Gironde in Bordeaux.
Chateaux Deville is nestled in Rions, right on the north bank of the Garonne, the southern branch of the famous Gironde estuary, the Northern being the Dordogne.
Enjoying some very famous neighbours, the vines here share the same soil structures as the famous Chateau Suau only a few kilometres to the north. Its also immediately adjacent to Cadillac, and just north of Sauternes.
Famous for his esteemed ‘Champagne Jean Paul Deville’ (featured as the only NV Champagne by the glass at Chef Tom Kerridge’s two-Michelin-Starred Hand & Flowers), Jean Paul Deville applies the same deft touch to his compact range of three Bordeaux.
Fantastic balance between the lemon and the grapefruit flavours, with a decent mineral palette, also a note of saline. At Gauthier Soho we are serving Chateau Deville with the Roasted Scottish Scallops, Jerusalem Artichoke Cream Caramelised Pear, Crustacean Dressing on the current A la Carte menu.
Crisp and clean as a whistle & dry, medium bodied with citric lemon and grapefruit notes from the Sauvignon, underpinned with a textural richness from the Semillon. This is no nonsense, brilliantly executed white Bordeaux. Very satisfying with a lifted zesty finish. - Ellis Wharton
