Roussanne, Grenache Blanc, Viognier • Costières de Nîmes AOC • 13.5%Vol • £12.67 per bottle
Selected by Sommelier David Havlik: "A superb Roussane/Genache Blanc/Viognier bend which I’ve chosen precisely for the flavours of the Spring menu at Gauthier Soho. When choosing wines for ingredients such as asparagus, spring peas and wild garlic, one looks for a white wine which allows these delicate fresh aromas to shine without shrouding them in acidity or fruitiness like you might with a summer wine. This wine is from a unique Camargues/Provence ‘pass’ with the obvious credential of enjoying similar terrain to Chateauneuf du Pape. Drink cool as an aperitif or with light salad and vegetable starters."
At Gauthier Soho we are suggesting Saint Cyrgues with the Warm Wild Garlic Cream, Roasted Shallot Royale, Udon Potato & Wild Garlic Tempura currently featuring on the lunch a la carte. Extremely good value, ready to drink right now, and will see you through until autumn as a great drinking white with food.
(producer notes) Costières de Nîmes (which loosely translates to ‘the slopes of Nimes’) sits at the nexus of rocky hills of Provence and the sandy alluvial plains of the Camargues. Many of its areas feature the larger, flat, galets, the signature stones of Chateauneuf du Pape. Seeing the potential in the Chateau, Saint Cyrgues was then updated with a complete overhaul of the property; with an updated winemaking facility, overhaul of the vineyards to 100% organic viticulture, and complete restoration of the chateau.
